Time off is nice

I got an unexpected half day off of work today. The folks back in MN are riding on go-carts, but I get to hang out at home. Sometimes its good to be forced to enjoy some time away from work. Vacations are fun, but they tend to be really busy, especially these days. When I get a break in the middle of the week like this, there’s nothing already planned for that spot so its genuine free time. I got home just at naptime, so we have a few hours to relax too.

I’ve been spending lots of time cooking lately…don’t know if it’s nesting, boredom, or what, but one of my favorite cooking blogs is The Pioneer Woman. Today I made the Pioneer Woman’s Spicy Shredded Pork. The plan is to have some delicious sandwiches for dinner tonight and then onto a Pork Enchilada Recipe…should be good. I’ll update with some pictures later on…
